The Denver Steak has been identified as the 4th most tender muscle of the cow. The University of Nebraska and University of Florida discovered this cut of the Chuck in 2007 in an effort to find high quality cuts in the beef animal that would be more cost friendly to the consumer. This cut is one to get excited about with its dense marbling and exceptional flavor when prepared like any other steak.
