The chuck eye steak is commonly called the "poor man's ribeye". This name tag comes from the fact that the chuck eye muscle is removed from the upper shoulder right in front of the ribeye during processing. This steak features the marbling and tenderness of the ribeye in a smaller and more affordable package.
